Creamy Rice Pudding

Ingredients

  • 4 cups (tea cups) of water
  • 1 cup (tea cup) of uncooked white rice
  • 1 cup (tea cup) of sugar or 1 small can of sweetened condensed milk
  • 1 small can of coconut milk (200 ml)
  • 2 egg yolks
  • Cloves to taste
  • ½ cup (tea cup) of shredded coconut
  • 1 cinnamon stick
  • 700 ml whole milk
  • Ground cinnamon for sprinkling
  • 1 dessert spoon of cornstarch
  • 1 small box of cream (200 g)

Directions

  1. In a pot over medium heat, combine the rice, water, sugar (or condensed milk), cloves, and the cinnamon stick.
  2. Cook until the rice is tender and most of the water has been absorbed.
  3. In a separate bowl, whisk the egg yolks with the cornstarch and a small amount of the milk until smooth.
  4. Add this mixture to the cooked rice along with the remaining milk, coconut milk, cream, and shredded coconut.
  5. Stir continuously over low heat until the mixture thickens and becomes creamy and glossy.
  6. Remove from heat, sprinkle with ground cinnamon, and serve the creamy rice pudding warm or chilled.

Serving suggestion

For an elegant finish, serve individual portions in bowls or glasses, topped with an extra sprinkle of cinnamon and a few toasted coconut flakes.
