Homemade Chicken Esfiha
This esfiha is perfect for a Sunday snack when everyone is home. The dough turns out so soft it melts in your mouth, and the chicken filling is simply divine. Shall we get our hands in the dough?

Grandma’s Ingredients
For the Fluffy Dough:
- 300ml warm whole milk (be careful, it can’t be hot!)
- 1 sachet of dry yeast (10g)
- 2 tablespoons of sugar
- 100ml of vegetable oil
- 500g of all-purpose flour (no baking powder)
- 1 teaspoon of salt
For Assembling:
- Seasoned chicken filling (whatever kind you like best)
- 1 egg yolk for brushing
- Extra flour for dusting
How to Make It, With Love
- Let’s wake up the yeast: In a large bowl, mix the warm milk, yeast, sugar, and oil. Stir with a wooden spoon, with love!
- Time for the flour: Add the flour little by little, stirring each time. When it’s firmer, add the salt.
- Now let’s knead: Place the dough on a floured surface and knead for 10 little minutes. Sing a song while you do it – time flies faster!
- The dough needs to rest: Form a ball, cover it with a clean cloth, and let it rest for about 1 hour. It will grow all happy and puffy!
- Time for the fun part: Divide the dough into 20 equal little balls. The children love this part!
- Shaping with care: Roll out each ball with a rolling pin, place the filling in the center, and close by pulling three little points together to form a small triangle.
- Almost there: Place the esfihas on a greased baking tray, let them rise for another half hour in the turned-off oven.
- To make them golden: Brush them with the egg yolk and bake in a preheated oven at 180°C for about 20 minutes. Until they’re beautifully golden!
Grandma’s Serving Tip
Serve them still warm, with a little lemon squeezed on top! And remember: the best seasoning is the whole family gathered around the table.
