For the Base:
- 150g chocolate biscuits (like Bourbons or Digestives)
- 45g unsalted butter, melted
For the Cheesecake Filling:
- 300g soft cream cheese
- 150ml double cream (heavy cream)
- 60g caster sugar
- 2 tablespoons kirsch (optional, for a special grown-up twist)
For the Topping:
- 410g black cherry fruit filling (from a can)
- 150g fresh blackberries
- 125g fresh blueberries
- Zest and juice of 1 lime
- 60g dark chocolate, for shaving
How to Make It, With Love
- Let’s make the base: Crush the biscuits in a bag with a rolling pin until they look like fine sand. Mix them with the melted butter until it’s nice and damp.
- Forming the base: Press this mixture firmly into the bottom of a pie dish using the back of a spoon. Pop it in the refrigerator for 30 little minutes.
- Now for the filling: In a big bowl, beat the cream cheese with the sugar until it’s lovely and smooth.
- To make it creamy: In another bowl, whip the double cream until it forms soft peaks. Gently fold it into the cream cheese mixture.
- The flavor secret: If you’re using it, gently stir in the kirsch.
- Putting it all together: Spread this creamy goodness over the biscuit base from the fridge. Smooth the top nicely.
- The colorful topping: Spread the cherry filling over the top, then scatter the blackberries and blueberries. Sprinkle with the lime zest and a little juice.
