Homemade Brazilian School Snacks (Bauru Assado)

Ingredients
  

For the Dough
  • 2 Eggs
  • 0.5 cup Milk Warm (approx. 120 ml)
  • 2 cups All-purpose flour
  • 0.25 cup Vegetable oil (approx. 60 ml)
  • 1 tbsp Dry yeast Active dry yeast
  • 1 tsp Salt
  • 1 tsp Sugar Granulated sugar
For the Filling & Topping
  • Ham slices For filling (approx. 8 slices)
  • Cheese slices For filling (Mozzarella works best)
  • Oregano Dried, to taste
  • Egg yolk Beaten, for brushing
  • Sesame seeds White and black mix, for topping

Method
 

  1. In a large bowl, mix the eggs, warm milk, flour, vegetable oil, dry yeast, salt, and sugar.
  2. Stir the ingredients thoroughly until the dough comes together and easily pulls away from the sides of the bowl.
  3. Transfer the dough to a clean, lightly floured surface. Knead it firmly for about 10 minutes until it becomes completely smooth, soft, and elastic.
  4. Place the kneaded dough into a lightly greased bowl. Cover it with a clean kitchen towel and let it rise in a warm, draft-free spot until it doubles in size (about 1 hour).
  5. Punch down the dough and roll it out into a large rectangle using a rolling pin. Layer your ham and cheese slices evenly across the surface, and sprinkle generously with oregano to taste.
  6. Roll or fold the dough over the filling to seal it securely. Cut into equal, individual-sized portions and place them onto a non-stick or greased baking tray.
  7. Brush the top of each snack with the beaten egg yolk for a beautiful golden finish, and sprinkle with white and black sesame seeds for extra crunch and flavor.
  8. Bake in a preheated oven at 180°C (350°F) for 30 minutes, or until the pastries are beautifully golden brown and the cheese inside is melted.

Notes

Make-Ahead and Freezing: You can freeze these savory snacks after they are completely baked and cooled. Wrap them individually in plastic wrap and freeze for up to 2 months. To reheat, pop them directly into a preheated oven or air fryer at 180°C (350°F) for 5 to 7 minutes until crispy and hot. Avoid the microwave to keep the pastry texture crisp.
